At the heart of this family business is the kitchen, run by chef Olivier Gulizzi, who proposes an inventive cuisine defined by local produce with a touch of the Mediterranean. Coming from Marseille, Gulizzi has worked at Le Ranquet since 2005. He began his career in this restaurant as second-in-command to the former owner/chef and holder of its first Michelin star. When the position of head chef became available, Olivier took over the kitchen and has since maintained the quality of the cuisine and the precious Michelin star. The menu features Pélardon goat cheese espuma with honey and roasted pine nuts, beetroot with balsamic vinegar; shredded skate,

slow-cooked and crunchy leek, pink peppercorn butter emulsion; roast fig with extra aged balsamic vinegar; vanilla panna cotta and Sichuan pepper tuile. If you’re licking your lips, it’s time to reserve at Le Ranquet!
