The grape harvest is over and the 2011 vintage promises to be a winner at the Cellar of the Winemakers of Beaumes-de-Venise. Despite the splendid fall colors in the surrounding vineyard, the cooler air and shorter days tempt us to participate in a cooking class by Pascal Poulain rather than taking a long walk…

Every Monday afternoon, the talented young chef shares his knowledge in a friendly atmosphere at these culinary workshops. Each week he teaches how to prepare a menu with a different appetizer, entrée and dessert: parsnip, coconut milk

and lemongrass soup, rack of spring lamb roasted with winter savory, cod and mashed potatoes served with Iberian chorizo, foie-gras and Basque chili, saffron pear soup with chocolate cake… These are just a few of the dishes on the program for November and December… And from January 15 to March 15, the classes will honor the black truffle, an international culinary favorite. The classes end with a meal that allows participants to enjoy everything you learnt how to cook. Friends are even invited to join, because here they teach you all the pleasures of cooking – the preparation

but also the eating! Because the classes are held within the cellar of “Balma Venitia,” this restaurant proposes a wine list that spotlights local vintages, so that you can drink the best matched wine with each dish on your menu.

Pascal Poulain doesn’t just settle for local wines, he works hand in hand with farmers, cheese makers and olive oil producers to create a seasonal cuisine with Mediterranean influences… The menu changes every fortnight, and the creativity of this young chef never disappoints. For the biggest gourmets, themed menus are developed according to the seasons: lobster menu in summer, Ventoux black truffles from January to March, and at the moment, Barroux saffron is celebrated.
